Blackberry Almond Butter Sandwich

Hi friends! Breakfast today is a Blackberry Almond Butter Sandwich from Self Starter! This is basically a fancy, adult PB&J with no added sugars and great ingredients.

If you don't know what Self Starter is, let me introduce you! It's a service you sign up for that delivers a monthly meal plan and grocery shopping list. You don't have to use every recipe, and you are always welcome to modify as needed. I was given a free trial, and I am loving the recipes so far! Everything is so fresh and it forces me to learn how to cook different things (I'm going to attempt to tackle fennel soon). 

Anyway, a breakfast option I chose today was the Blackberry Almond Butter Sandwich. It takes no more than five minutes to make, and it's packed with nutrients. 

Blackberry Almond Butter Sandwich

Directions:

  1. Lightly toast two slices of Ezekiel bread
  2. In a small bowl, smash blackberries with a fork, then mix in chia seeds
  3. Assemble sandwich with blackberry mixture over one slice of bread and almond butter over other slice
