Pineapple Cauliflower Rice With Mahi Mahi And BBQ Sauce

Can I just say, cauliflower is the best vegetable?! I love my brussels sprouts and squash, but cauliflower is so incredibly versatile it's insane. You can substitute it in so many meals and not even notice the difference. This Bachelor Monday (#TeamPeter) I decided to try something new — Pineapple Cauliflower Rice with Mahi Mahi and BBQ Sauce. It was SO, SO GOOD. Like, I can't believe I have never made this before. 

Let me just preface by saying that serving it in a pineapple boat is super cute and fun, but it was also beyond messy. I also didn't google how to properly cut the pineapple, so this might just be my fault. It's probably better served in a bowl, but if you want this for presentation, I don't blame you. 

Pineapple Cauliflower Rice With Mahi Mahi And BBQ Sauce

Servings: 3

Ingredients: 

Directions:

  1. Heat a large skillet on medium-high, coat pan with spray oil, and add garlic, cooking for 1-2 minutes.
  2. Add chopped onion and diced bell pepper and stir for another 2-3 minutes.
  3. Pour entire package of riced cauliflower into the skillet and stir for 4-6 minutes.
  4. Meanwhile, in a separate pan, coat with spray oil, put on medium-high heat, and add Trader Joe's frozen mahi mahi patties, cooking each side for about 5 minutes. Once tender, cut the patties into pieces and cook all the way through.
  5. Cut, core, and dice pineapple, then add pineapple and shredded carrots to the mixture.
  6. Add soy sauce, diced mahi mahi, and salt and pepper as needed.
  7. Distribute between three bowls and drizzle each with 1 tbsp of BBQ sauce. 

Just a note: I always make things for myself in a single serving unless it makes more sense to do it all at once. So I made three servings of the pineapple cauliflower rice and saved two for leftovers, but I cook one patty at a time. You can make all three at once and just meal prep it, I just prefer to cook it per meal.
