Recipe: Brussels Sprouts + Mushroom Grilled Cheese
Hi friends! It’s been a while since I’ve put a recipe on the site, so I figured it was time. This Brussels sprouts + mushroom grilled cheese is super easy to make and tastes SO GOOD. It’s inspired by the apple + Brussels grilled cheese from Skinnytaste’s Fast & Slow cookbook (which you should buy, it’s amazing!). Please note that I no longer weigh and measure my food, so I don’t have exact measurements. I can provide what I think it will include, but I’m just winging it here.
Brussels Sprouts + Mushroom Grilled Cheese
Servings: 1
Ingredients:
Spray olive oil
1 tbsp olive oil
Two slices of wheat bread
1/2 cup Trader Joe’s Shredded Mozzarella Cheese
3/4 cup Trader Joe’s Shredded Brussels Sprouts
1/4 cup white mushrooms
Salt and pepper to taste
Directions:
Heat a large pan on low-medium heat and spray with olive oil
Place two pieces of bread on the pan and evenly distribute cheese among the slices
While the cheese is melting and the bread is browning, heat another pan on medium heat and add 1 tbsp olive oil
Add mushrooms, Brussels, salt, and pepper and keep mixing till it’s cooked
Then add the “toppings” to one of the pieces of bread, and place the other slice of bread (cheese should be mostly melted) on top to make a sandwich
Use a spatula to carefully flip sandwich, until both pieces of bread are golden brown
