BBQ Jackfruit Sandwiches
Things are rough. I wish I could start off on a happier note, but I find it important to be real about this journey too. I've had a difficult time adjusting post-gallbladder surgery, and I've been bingeing BAD. Like, every weekend I have been eating 5,000+ calories at a time. I've gained a ton of weight, lost most of my muscle, and generally feel lost. I'm essentially starting from the very beginning, and that's a hard reality to swallow. I am thinking of doing a Sugar-Free September (natural sugar is ok), and I will post on here if I decide to do so!
NOW back to regularly scheduled programming. On Friday for lunch I tried something different and made a BBQ Jackfruit Sandwich. Y'all... IT WAS AMAZING. In case you haven't heard of this, jackfruit is a fruit native to South India, and it's often used as a meat substitute in vegetarian/vegan cooking. I bought the canned jackfruit from Trader Joe's and it was really easy to make. I also had this with a side of warm cinnamon apple slices (all I did was cut the apple, coat with cinnamon, and pop in the microwave for two minutes). This sandwich would also taste great with some sort of carrot/cabbage slaw.
As for the bun, I used a Perfect 10 Whole Grain Western Bagel! Guys, these are so soft, only 150 calories with 19g of protein, and they're pretty big. BBQ Jackfruit Sandwiches
Servings: 2
Ingredients:
- Spray olive oil
- 1 can Trader Joe's Green Jackfruit
- 4 tbsp Trader Joe's Brown Sugar BBQ Sauce and Marinade (3sp per 2 tbsp)
- 1 tbsp water
- 2 Laughing Cow Pepper Jack Cheese Wedges (1sp per wedge)
- 2 Perfect 10 Whole Grain Western Bagels (3sp each)
- 1 small donut peach
Directions:
- Drain jackfruit, pat dry, and partially shred jackfruit chunks into smaller pieces.
- In a sauté pan, coat with spray olive oil over medium heat and add jackfruit for 5 minutes.
- Add BBQ sauce and water to pan and stir to evenly coat jackfruit.
- Cover pan and simmer on medium-low heat for 20-25 minutes, stirring occasionally and pulling jackfruit apart as it becomes tender.
- Toast both bagels until desired, spread each with a cheese wedge, and top with the BBQ jackfruit and donut peach slices.
- Serve with whatever side you want and enjoy!
Note: I made two servings of the jackfruit, set one aside in my fridge for leftovers, and only made one sandwich for lunch.
