Sweet Potato And Apple Hash With Eggs
Good morning! Looking for a sweet and savory breakfast idea? I've got you covered. This is a really simple recipe and it doesn't take very long to make. You can use your choice of apple, but my favorite is Honeycrisp. You can also make the egg however your heart desires! I've done both sunny side up and scrambled.
Sweet Potato And Apple Hash With Eggs
Servings: 1
Ingredients:
- Spray olive oil
- 1 sweet potato (WW points vary depending on weight - use a food scale to calculate)
- 1 small apple
- 1 egg (2sp, 0sp on Freestyle)
- Salt and pepper
Directions:
- Wash and cut a sweet potato into cubes.
- In a sauté pan, coat with spray olive oil over medium heat and add sweet potatoes with salt and pepper, tossing for two minutes. Then cover for 5 minutes.
- Meanwhile, wash and cut an apple into cubes. Then add the apples to the pan and toss with the sweet potatoes. Cover for another 10 minutes and mix occasionally.
- Take a spatula and move the hash to create an empty circle in the middle. Spray with oil and crack an egg into it. Cover for another 2-3 minutes or until cooked.
- Use the spatula to transfer to a plate. Enjoy!
