Buffalo Turkey Zucchini Boats
I love love LOVE this low-carb lunch or dinner option! If you don't know, I am absolutely obsessed with Frank's Buffalo Sauce. Like their tagline says, I put that sh*t on everything — I even use it as dressing for salads. This recipe is inspired by The Wholesome Dish and it's super simple and tastes BOMB, and I can make it in my toaster oven. (My building hasn't had cooking gas since February so I've been making everything on a hot plate or in my toaster oven.)
Buffalo Turkey Zucchini Boats
Servings: 1
Ingredients:
- 1 medium zucchini
- 3 oz cooked 99% fat free ground turkey (1 SmartPoint, 0 SmartPoints on Freestyle)
- 1 oz Trader Joe's Lite Mozzarella Cheese (1 SmartPoint)
- 1 tbsp Frank's Buffalo Sauce
- 3 oz baby carrots (optional)
- 16 Trader Joe's Multiseed Soy Thin Crackers (optional) (1 SmartPoint)
- Salt and pepper to taste (optional)
Directions:
- Preheat the oven or toaster oven to 375 degrees
- Wash and cut zucchini in half length-wise to create two "boats"
- Put on a tray in the oven for about 5-7 minutes
- Meanwhile, combine cooked ground turkey and buffalo sauce and mix
- Evenly distribute the mixture between the two boats
- Top with cheese and pop back in the oven for another 5-10 minutes or until cheese melts
- Serve with carrots and crackers if desired
It's also good to note that this is meant as one serving, but you can make it into two if you want. Hope you like it! :)
