Smoked Salmon Cucumber Bites
Smoked. Salmon. This is one of my favorite meals, and it's so incredibly healthy too. It's low-carb, has healthy fats, and is beyond refreshing. This dish is also perfect for a summer potluck or cookout! Bring these to a party and I promise they'll vanish.
Smoked Salmon Cucumber Bites
Servings: 1
Ingredients:
- 1 large cucumber
- 3 oz Blue Hill Bay Smoked Wild Alaskan Sockeye Salmon (1 SmartPoint, 0 SmartPoints on Freestyle)
- 1 Laughing Cow Cheese Wedge (1 SmartPoint)
- 1 packet of Enlightened Broad Beans (optional, 2 SmartPoints)
- 1 tbsp capers
- Salt, pepper, and hot sauce to taste
Directions:
- Wash and cut cucumber into small "rounds"
- Lay them on a plate and pat down slices with a paper towel to make it more dry
- Spread one cheese wedge evenly between half the cucumber rounds (only the bottom of the "sandwiches")
- Top each cheese round with capers (as many as you want) and smoked salmon
- Then add the other half of cucumbers on top of the salmon to make a sandwich and secure with a toothpick
- Add salt, pepper, and host sauce to taste
- Serve with Enlightened Broad Beans if desired
