Cantaloupe With Honey Yogurt And Pistachios

Today I realized how much I love pistachios. I never really eat them, and I have no idea why?? But I saw this cantaloupe recipe from Self Starter and wanted to give it a shot. The combo of the salty pistachios with the sweet, creamy yogurt is genius. 

Cantaloupe With Honey Yogurt And Pistachios

Servings: 1

Ingredients: 

  • 1/2 small cantaloupe
  • 1 container plain non-fat greek yogurt (1 SmartPoint, 0 SmartPoints on Freestyle)
  • 1/4 tsp vanilla extract
  • 1 tsp honey (1 SmartPoint)
  • 1/2 oz pistachios (3 SmartPoints)
  • Cinnamon

Directions:

  1. Cut cantaloupe in half and scoop out the seeds (store other half in the fridge for later use)
  2. In a bowl, stir together yogurt, vanilla extract, and cinnamon
  3. Spoon yogurt mixture into cantaloupe, top with pistachios, and drizzle with honey

While this is a beautiful presentation of the meal, I will warn you that it's messy to eat, and the yogurt can get too watery from the cantaloupe. Next time, I am going to just cut the cantaloupe in cubes and use the yogurt mixture as a dipping sauce.
