Turkey Melt Zucchini Boats
Zucchini and cauliflower are amazing vegetables. They are so versatile and can be used in so many recipes in very different ways. Zucchini boats are simple to make and they taste incredible! I made a low-carb option of a traditional type of sandwich, and it tasted just as good (if not better) than bread.
Turkey Melt Zucchini Boats
Servings: 1
Ingredients:
- 1 large zucchini
- 4 oz deli turkey breast (2 SmartPoints, 0 SmartPoints on Freestyle)
- 1 oz Trader Joe's Shredded Lite Mozzarella Cheese (1 SmartPoint)
- 1/4 cup sun-dried tomatoes (not packed in oil)
- Salt and pepper to taste
Directions:
- Pre-heat oven to 375 degrees and wrap a small tray in aluminum foil
- Wash and cut a zucchini lengthwise and scoop out flesh with a spoon (I usually just eat the scooped out flesh with salt and pepper so it doesn't go to waste)
- Place on the tray and put in the oven for about 8-10 minutes
- Fill zucchini boats with sun-dried tomatoes first, then two rolled up slices of turkey each, and top with cheese, salt and pepper
- Put back in the oven and broil until cheese is melted
- Serve with crackers and carrots if desired
