Sun-Dried Tomato And Avocado Grilled Cheese

One of my all-time favorite comfort foods is grilled cheese — usually with bacon on it, to be honest. However, ever since I did my sugar detox, I've been experimenting with a ton of new recipes and combos, and this kind of came out of some leftover ingredients in the fridge. 

Like Oprah, I am obsessed with bread. It is the one thing I refuse to "give up" because life is about balance and enjoying yourself, right? Good news is, you don't have to demonize carbs and avoid them for the sake of eating healthy! This amazing lunch is packed with healthy fats and it tastes SO EFFING GOOD.

Sun-Dried Tomato And Avocado Grilled Cheese

Servings: 1

Ingredients: 

  • Spray coconut oil
  • Two slices of Ezekiel Sprouted Whole Grain Bread (4 SmartPoints)
  • 1/2 of a hass avocado (4 SmartPoints)
  • 2 oz Trader Joe's Shredded Lite Mozzarella Cheese (2 SmartPoints)
  • 1/4 cup sun-dried tomatoes (not packed in oil)
  • Salt and pepper to taste 

Directions:

  1. Heat a pan on medium-high heat
  2. Coat one side of each piece of bread with a dash of spray coconut oil
  3. Take one piece of bread, sprayed side down, and put in the pan
  4. Top with 1 oz lite mozzarella, 1/2 an avocado (mashed), and sun-dried tomatoes
  5. Then top with remaining lite mozzarella, and the other piece of bread (sprayed side up)
  6. Let it sit for a 4-5 minutes or until golden brown on the bottom
  7. Use a spatula to carefully flip sandwich, and let the other piece of bread get golden brown
  8. Serve and eat!
