Turkey Mini Egg White Cups

Looking for a healthy, protein-heavy breakfast? This super simple, 15-minute recipe is so easy and delicious and you can customize it however you want. If I'm in the mood for something low-carb, I love to do mini egg white cups. This specific recipe uses liquid egg whites, ground turkey, spinach, mushrooms, and salt and pepper. All 12 mini cups are only 2 Weight Watchers SmartPoints (total, not each) and I eat them all at once. I've never tried to freeze them before, but I've heard it works! 

Turkey Mini Egg White Cups

Servings: 1

Ingredients: 

  • Spray coconut oil
  • 1 cup liquid egg whites (1 SmartPoint, 0 SmartPoints on Freestlye)
  • 1/2 cup raw spinach (fill each mini cup with 2-3 broken up leaves)
  • 1/3 cup raw mushrooms 
  • 3 oz cooked ground turkey (1 SmartPoint, 0 SmartPoints on Freestyle)
  • Salt and pepper to taste 

Directions:

  1. Preheat oven or toaster oven to 375 degrees
  2. Coat one 12-mini cup pan with spray coconut oil
  3. Place 2-3 leaves of broken up spinach and 2-3 pieces of mushrooms in each mini cup
  4. Place cooked ground turkey evenly between each mini cup
  5. Fill each mini cup to the brim with liquid egg whites, which equals 1 cup total
  6. Add salt and pepper to taste and bake for 15 minutes
  7. Let it cool and use a butterknife to transfer to a plate
  8. Serve and eat!
