Sun-Dried Tomato And Ricotta Spaghetti Squash

Hi guys! So I have been getting a ton of requests for this recipe, and I've put together this post for you. Now, what I am about to tell you might be ~controversial~ so it's up to you to decide how you actually cook this. Listen, I sometimes get home late or just don't want to spend 40 minutes roasting squash - so I hack the system. I microwaved this spaghetti squash for eight minutes and it was done. There's always chat about how microwaving food makes it lose its nutrients or some shit (honestly I have no idea how legit that is and I'm too lazy to google it), but I know damn well that I'd rather microwave squash than open a bag of chips for the sake of time and convenience. Take what you want from that info and go forth!

Sun-Dried Tomato And Ricotta Spaghetti Squash

Servings: 1

Ingredients: 

  • ½ spaghetti squash
  • 3 tbsp Trader Joe's ricotta cheese
  • ½ ounce sun-dried tomatoes (not packed in oil)
  • ½ cup Trader Joe's traditional marinara sauce
  • 3 ounces cooked ground turkey
  • Salt and pepper 

Directions:

  1. Cut a spaghetti squash in half and scoop out the seeds. Then place in the microwave for 8-10 minutes or until tender.
  2. Heat a pan on medium-high heat, coat pan with spray oil, and add cooked ground turkey, sun-dried tomatoes, marinara sauce, and ricotta cheese.
  3. When spaghetti squash is done, use your fork to create spaghetti-like strands and add to the pan, mixing contents for about two minutes.
  4. Serve in a bowl and enjoy!
